From Centraal Station, just walk about a 1/4 mile down Damrak and you'll run right into Dam Square. The selction is generally pretty good and prices are comparable to those in France and Belgium, sometimes better. I always see lots of Rolex(of course), IWC, and Blancpain models, to name a few. Amsterdam Diamond Center and Rokin Jewellery
According to my experience the best places are aforementioned shops and one more down the road along Rokin st. They carry among others Franck Muller, AP etc. I could negotiate around 15% discount on Franck Muller and AP RO OS. Alas it was still too expensive ... All those places are right in center around Dam Square.
On or around Kalvertstraat, in the southern end of the street, and especially on one or two small streets between Kalvertstraat and Singel. I can't remember any names but I have seen Lange, Glashuette, Van Der Bauwede and so on in those boutiques. Generally, the Venice of the North is pretty mediocre in watch shop selections.
There are some shops near the Kalverstraat, for example Schaap & citroen who had a nice selection Patek Philippe and Jaeger lecoultre the last time I checked. In the Kalverstraat you will also find a small, old store named Elka. They have a very small collection of Jaeger lecoultre and they also have a few Ulysse Nardin watches. They are going out of business soon so you might be able to pick up a watch there waith a nice discount.
Also a little shop in the area of the University of Amsterdam, on the stop after the Dam (called Rokin). If you cross the bridge and head to the canal, you will be on the Oudezijds Voorburgwal. Just walk until you have to make a left turn to go back up the canal heading towards central station (the UvA student dining room would right in front of you). The shop is on the east end of the canal and has lots of vintage Rolex, 0megas, PP, VC, Jaeger Le Coultre, you name it. It is fun haggling for the price and you can find some really nice vintage pieces.
